sausages w. vegetables ~ one pot meal

but i use a baking pan instead of a pot here, with this delicious and incredibly easy to make dish. and i do love my one pot meals because they’re easy on both preparation and cleanup fronts. i should start off by saying that this recipe is 100% vegetarian in that these sausages are vegan. but don’t let that scare you, these sausages are so good!, so good that you won’t even be missing the meat, if in fact you are a carnivore. i myself do eat meat on occasion, so technically i don’t call myself a true vegetarian. but let’s get cooking!

ingredients: {serves 2}
• extra virgin olive oil
• 1/2 large onion – roughly chopped into 1/2 inch pieces
• 2 large carrots – roughly chopped into 1/2 inch pieces
• 2 medium new potatoes – roughly chopped into 1/2 inch pieces
• 2 vegan sausage links {field roast smoked apple sage} – chopped into coins
• cooked brown rice – about 1/3 to 1/2 cup per serving
• italian flat leaf parsley – roughly chopped
• kosher salt and cracked black pepper
• herbs de provence
• agave nectar, good quality maple syrup or honey
• seasoned rice wine vinegar
• goma shio – japanese black sesame seeds {optional}
• french baguette {optional}

to do:
preheat oven to 375 degrees f. on a baking pan, toss the onions, carrots and potatoes in olive oil to coat. season the vegetables with salt and pepper to taste, herbs de provence and any other seasonings of your choice. bake for 30 to 40 minutes or until vegetables are fork tender. add the sausage coins to the pan during the last 5 minutes, as they have been precooked. spoon cooked rice into serving bowls. drizzle a little seasoned rice wine vinegar over the rice along with a light sprinkling of goma shio for a slight salty bite. add the roasted sausages and vegetables atop the rice. drizzle your choice of sweetness {agave nectar, maple syrup or honey} over the mixture and garnish with a touch of flat leaf parsley. serve with slices of french baguette along side a glass of red wine, such as a full-bodied chianti. enjoy!
