red wine risotto with peas

courtesy of giada de laurentiis, one of my favorite food chefs. i like her food because it’s clean, appetizing, beautiful and most of all, simple. risotto is one of those recipes that tends to intimidate people. this used to be the case with me, until i tried this recipe. the key is just to slow down and take the time to give your cooking some love and attention. and by love and attention, i mean by actually stirring the chicken broth into the rice, throughout most of the cooking process. this will ensure that perfect, thick and creamy consistency, one that every respectable risotto recipe should have.








we had this with a small crisp salad, french baguette slices and pinot noir.
