huge salads

i love making these yummy salads and do so quite often. but they are salads after all, so they still must remain tasty, healthy and filling all at the same time. it would be defeating the purpose of eating a salad if it wasn’t healthy, right? my husband is even a fan, and you know men, salads aren’t normally a big part of their usual meal plan. i try and be creative and like to throw in as many healthy ingredients as possible. the only thing that remains pretty much constant is the dressing, which i make myself. i hope you will try your hand at creating a salad like this sometime!

ingredients in these salads: {1 serving}
• romaine lettuce – chopped
• raw fennel – thinly sliced
• tomatoes – chopped
• grape tomatoes – halved
• carrots – chopped
• celery – chopped
• manzanilla olives – sliced
• smoked gouda – cubed
• canned tuna in water or olive oil – flaked
• dill pickles – cubed
• beets – sliced and cubed
• light feta – crumbled
• slivered almonds – a pinch or two
• bee pollen – a few shakes
• dried oregano – a few shakes
• nutritional yeast flakes – a few shakes
• yellow bell pepper – chopped
• red bell pepper – chopped
• mushrooms – sliced
• raw walnuts – a couple chopped
• raw cashews – a few chopped
• dried cranberries – a little palm full

for dressing: {1 serving} – wisk together all ingredients
while drizzling olive oil in

• olive oil {sometimes i omit this} – a few seconds of drizzling to taste
• 1/2 garlic clove – finely minced {sometimes i omit this}
• balsamic vinegar or seasoned rice wine vinegar {whatever i have on hand}
– a couple swigs to taste
• soy or tamari sauce – about 1/2 T to taste
• real maple syrup or honey – about 1 to 2 T to taste
• kosher salt – a dash to taste
• freshly ground black pepper – to taste

to do:
place all prepared vegetable components into a large mixing bowl, pour dressing over salad and toss with salad hands or your own clean hands. now, park yourself in front of your favorite show because this takes quite some time to eat. enjoy!
