potato latkes + sausages

this is one of my absolute favorites! my mother used to make potato pancakes from scratch and i would always beg her to make them. often times she would resist because i have found that they can be quite labor intensive. okay, so i haven’t actually tried making them from scratch just yet, but the stuff from the box will do me just fine. sweet maple syrup is just so delectable over the hot cakes and it’s quite easy to make, so i hope you will try this one!

ingredients: {serves 2}
• box mix of potato pancakes
• 2 sweet italian sausages in their casings
• 1/2 sweet onion sliced
• 1/2 red bell pepper sliced
• herbs de provence
• kosher salt & cracked black pepper to taste
• good quality maple syrup
• olive oil or vegetable oil {i use whatever i have on hand}

to do:
brown onions and peppers in a pan coated with oil. season with herbs, salt and pepper. meanwhile, boil the sausages in a pot until cooked through, then add to the pan to brown. cook the potato latkes by following the instructions on the box. serve the sausages, onions and peppers along side the pancakes and top with an ample amount of maple syrup. enjoy!
