pears poached in red wine sauce

every holiday my aunt and uncle send fresh pears from harry & david. and though i enjoy eating pears in their raw form i also find it fun to use them in a slightly decadent dessert. enter the poached pears in red wine sauce recipe!

• 4-6 peeled, cored and sliced pears, or you can leave them whole like i chose to, bosc or anjou are recommended
• 1 1/2 cups of red wine, i had shiraz on hand
• 3/4 cups of granulated sugar
• 2 T of lemon juice + zest
• 2 t vanilla extract
• 2 t cinnamon

to do:
combine all the ingredients minus the pears and bring to a boil. once the wine mixture is boiling, turn heat down to a simmer and add the pears. simmer pears for 10-12 minutes and then turn pears and simmer for an additional 8-10 minutes until tender. remove the pears and allow to cool. boil wine sauce until the liquid has been reduced by half. pour sauce over pears and serve with mascarpone cheese or crème fraiche. enjoy!
