i could live on tacos. seriously. tacos and pizza. not to get all unhealthy on you guys but these aren’t really all that bad for you. this variation uses grass-fed beef but i most often use ground turkey. and no bells and whistles here, just clean and simple deliciousness! another trick is to use greek yogurt in lieu of sour creme, it works like a charm.

• 1 pound ground beef, bison or turkey {organic, grass-fed is always the best option}
• 1 sweet onion finely chopped
• 3 roma tomatoes diced
• shredded lettuce
• shredded cheddar cheese
• salsa
• hot or mild sauce
• greek yogurt
• vegetable oil
• hard/soft shell tacos
• s + p
• 1 packet taco seasoning

to do:
begin by browning the meat in a large skillet and breaking into small pieces. once cooked slightly, drain excess fat and place aside. toss 1/2 chopped onion into the pan w. a little vegetable oil plus s + p and sweat until translucent. add the meat back into the pan along with the taco seasonings {following the packet instructions}. prepare all of your toppings, assemble and enjoy!
