chicken salad

throughout certain points in my life i’d always been in the habit of scoping out great chicken salad sandwiches. while working in point richmond, ca it was at louie’s deli, and when at the hosptial at uw madison it was the bagel sandwiches from the cafeteria. funny enough i still have yet to make them taste a bit unhealthier than they do now, so i’m working on it.

2 large cans white chicken
1/4 to 1/2 cup light and healthy mayo {maybe this is the culprit as to why they taste too healthy?}
2 T dijon mustard
lemon juice + zest
1 celery stalk finally diced
1/4 sweet onion finally diced
garlic clove finally minced
toasted slivered almonds
dill weed
s + p

to do:
toss all of the ingredients into a bowl and incorporate well. spread onto crisp lettuce leaves inside toasted pita pockets. enjoy!
