granola is one of those snacks that is highly underrated. but it really is one of the most easiest things to make and not to mention, extremely wholesome and healthy. and there are so many renditions out there that i just decided to wing it and make up my own. every time i make granola it’s a slightly different recipe, no two versions are alike. so here’s the recipe for this batch!

• 2 1/2 cups rolled oats
• 1/2 cup chopped raw almonds
• 1/2 cup chopped raw walnuts
• 1/2 cup chopped raw peanuts
• 1/2 cup chopped raw cashews
• 1/2 cup raw wheat germ
• 1/2 cup brown sugar
• 1/2 cup canola or vegetable oil
• 3/4 cup honey or pure maple syrup
• 1/2 cup raisins
• 1/2 cup dried cranberries
• 1/2 t vanilla extract
• 1/2 t coconut extract
• 1/2 t almond extract
• 1 T cinnamon
• 1 t salt

to do:
preheat oven to 325 degrees f. heat the honey or syrup and the oil in a small sauce pan on medium. carefully mix and set aside. in a large bowl mix together all of the ingredients minus the raisins and cranberries. pour the oil and syrup mixture over the dry ingredients and incorporate. spread the mixture evenly onto a baking sheet and bake for 20 minutes. when removing from oven, immediately add the raisins and cranberries, toss together and allow to cool. break up any large clusters and store in an airtight container for up to 2 weeks. serve over greek yogurt or just as is. enjoy!
