chicken caesar salad

my sister and i both have a major obsession with chicken caesar salads, as do a lot of people i think. i order them all the time when i eat out, but never attempted to make them at home for some reason. so with last night’s leftover roasted chicken and day-old ciabatta bread, it has proven to be a cinch!

ingredients: {serves 2}
• one bunch of romaine lettuce, washed, thoroughly dried + chopped
• day old baguette cut into bite-sized cubes
• garbanzo beans, drained, rinsed + dried
• roasted chicken cut into bite-sized pieces
• garlic seasonings

• 1 egg yolk at room temperature
• 1 t dijon mustard
• 1 garlic clove, minced
• 1 or 2 anchovy fillets
• juice of a lemon
• extra-virgin olive oil
• kosher salt to taste
• fresh ground black pepper to taste
• parmesan cheese shredded

to do:
in a large bowl toss together the chopped lettuce and garbanzo beans, set aside.
pre-heat oven to 400 degrees and bake the bread cubes tossed in olive oil and garlic seasonings until golden brown. this will not take long so be sure to watch carefully. now in a mini food processor, pulse all of the dressing ingredients while streaming in the olive oil. pulse until mixture is smooth and well-blended. coat the the lettuce and beans with the dressing. add the chicken and baked croutons a top and serve immediately. enjoy!
