pierogies w. fried onions + cabbage

every now and then it’s nice to pay homage to your roots and this eastern european {slovak} dish was one of my dad’s favorites while growing up. my grandmother made hers from scratch but these frozen ones from a box will suffice perfectly for now..

ingredients: {serves two}
• one box frozen potato + cheese pierogies {12}
• 2 to 4 Tablespoons unsalted butter
• extra-virgin olive oil
• salt + cracked black pepper
• 1/2 sweet onion chopped and diced
• 1 small garlic clove minced
• parmesan cheese shredded
• greek yogurt {i like 0% fage}
• 1/4 head cabbage chopped

to do:
bring water to a rolling boil, cook the frozen pierogies according to the box instructions, drain and put aside. drizzle the olive oil in a hot pan. add the onions and garlic, seasoning with salt and pepper as you go and sauté until caramelized. remove the onions from the pan onto a plate.

add two Tablespoons of butter into the pan along with the cabbage, cook until the cabbage is tender and wilted down. remove the cabbage from the pan onto a plate.

add the remaining two Tablespoons of butter to the pan along with the cooked pierogies, fry until slightly browned. add the cabbage and onions back into the pan, gently toss together and cook for a few more minutes. serve immediately with parmesan cheese sprinkled a top and a bit a greek yogurt {in lieu of sour cream} on the side for dipping. enjoy!
