vegetable soup

• carrots
• celery
• potatoes
• large onion
• garlic
• cannellini beans
• garbanzo beans
• artichoke hearts
• corn
• peas
• flat-leaf parsley
• extra-virgin olive oil
• v8 juice {2 cans}
• vegetable stock or water
• kosher salt + cracked pepper
• other seasonings of your choice

to do:
toss all chopped ingredients into a large stockpot with a bit of extra-virgin olive oil. season liberally as you go and sauté for a few minutes. add the liquid, bring to a boil, simmer for about 1 hour at least or until all vegetables have softened. enjoy with a baguette or saltines!
